Fruit Cocktail Cake

 MAKES 1, 8X8" PAN

(DOUBLE ingredients to make a 9x13 pan)

 (Grandma Ackerman's recipe 💕)

1 cup flour                              1, 15 oz. can fruit cocktail (including juice)

1 cup sugar                             1/2 tsp salt

1 tsp cinnamon                       1 tsp vanilla

1 tsp baking soda                    1 egg

 (that's right no oil, butter or shortening!!)

Beat all ingredients together;  pour into a greased & floured pan--sprinkle with 1/2 cup chopped walnuts(optional) & 1/2 cup brown sugar.  Bake @ 325 degrees for 45-55 minutes.  Serve with whipped cream or vanilla ice cream.  (Can serve warm, room temperature or chilled.)
