Lightly seasoned,
meat-free, black bean patties. Don’t try to pass them off as burgers—it just
won’t work! But if you want to still eat
an edible & tasty meat substitute, give this a try. Spice it up or down according to your
taste. This is another recipe you can be
creative with by changing the topping --Be creative with the sauce added to the
top just before serving—try a flavorful beef gravy, cheese sauce, BBQ sauce, salsa,
guacamole, etc. Could also consider
using the “meat” for taco or enchilada filling or even as a pizza topping. These Black Bean Patties will be added
to my regular rotation of meal options.
Servings: 8+
Ingredients
Mix together—will look
like chunky cookie dough
· 4 cups of
cooked dried black beans or 3 cans (16 oz. of canned black beans,
rinsed and drained)
· 1-1/2 cups uncooked
quick oats
· 1 small
onion finely diced
· 1 tablespoon of
Volcanic Peppers Spicy Ponzu Sauce or 1 tablespoon of soy sauce or steak sauce
(I used 1 Tbsp. Liquid Aminos—a soy sauce substitute)
· 1 cup of
finely chopped celery
· 3 large
eggs
· ½ teaspoon of
salt
Use for breading and
frying; mix flour & cornmeal together:
· 1/4 cup of
flour
· 1/4 cup of
cornmeal
· olive
oil for frying
Add to top of each pattie
just before serving:
· Add your favorite pasta sauce (about a tablespoon for each patty)
· 1 slice of
American cheese for each patty
· grated
Cheddar cheese about a tablespoon for each patty
Instructions
1.
Coarsely mash your cooked or drained canned beans with a fork
before combining everything EXCEPT the flour, cornmeal, and oil. (I “pulsed”
the black beans in my stand mixer for approximately 30 seconds, then added the
additional ingredients, mixing for approximately 60 seconds more—you don’t want
mush, but a chunky mixture, similar to my favorite chocolate chip cookie
recipe.)
2. Shape
into eight+ patties. (The mixture is NOT sticky and easy to work with, but
would probably not hold together for meatloaf or meatballs) Dredge each pattie in
the flour and cornmeal mixture before cooking in enough HOT olive oil to fry
(about five minutes each side) until lightly browned. Add additional oil and
heat until shimmering before cooking more patties. (Remember, the beans are already cooked—it is
the eggs and oatmeal that need to be cooked by heating through in the frying
process.) Finish cooking all patties. Refrigerate
any leftovers & reheat in the microwave.
3. Top
with your favorite pasta sauce, then add a slice American cheese and a
sprinkling of Cheddar cheese to melt over top.
4. Finish
each pattie with a dollop of sour cream.
