Baked Rice

I ran across a short TikTok video several months ago and was intrigued.  I finally tried the recipe and really like it.  I will be serving it year-round.  Tastes sooooo good but watch the sodium—use reduced sodium boullion/broth if desired instead of the consommé, (I did).

  • 1 lb. rice (white, Basmati, Jasmine, etc) (pour into 9x 13” baking dish)
  • 1 can French Onion Soup
  • 1 can Beef consommé (or use double-strength broth)
  • ½ cup melted butter
  • *optional: 2, 4 oz. cans sliced mushrooms with liquid
  • *if NOT using canned mushrooms, add additional 1 cup water

Stir all, briefly, just to combine ingredients.

 Cover tightly with foil.  Bake at 350F for 30 minutes.

 After 30 minutes, carefully remove from oven and cover all with Pecorino-Romano Cheese (about 1/2 cup).  Cover tightly, bake for additional 30 minutes.  Fluff rice.  Serve.  (This will become a favorite side dish!)  Serves 8-10.

(I haven't tried it, but with larger baking pans, like 1/2  or full steam tray/roasting pans, you should be able to double of quadruple the recipe--perfect for large dinners.  You would need to add approximately 20-40 minutes to the baking time.)
