I tried a new Thanksgiving turkey recipe/method. I like it! It was NOT more effort, and is probably my new favorite turkey method! The result was a beautiful golden-brown turkey, drippings for plenty of gravy and a moist, tender turkey. My turkey was 19.87 pounds (yes, plenty of leftovers). I did add a nice compound butter (garlic, onion, butter-that’s it) under the breast skin. I like Alton Brown (Good Eats from Food Network) and today, he made turkey, from start to finish, a winner. I have always found turkey carving very challenging—Paul Kelly’s method was easy to follow and does yield actual recognizable sliced turkey. (see link below)
