Let the
holiday cooking begin! I made some
delicious pulled pork. I used a recipe
from https://thesaltymarshmallow.com/instant-pot-pulled-pork/ (Thanks, Nichole @the_salt_marshmallow.com) This recipe is easy. I have tried several Salty Marshmallow recipes
and they have all been winners.
As you may recall, I love
cooking with my Instant Pots and this one makes me happy (and thankful) for
Instant Pot technology that improves the recipe speed, meat tenderness &
infuses the meat with FLAVOR. Did I
mention ease of cleanup?? That is a BIG
& important factor for me—not entirely because of laziness, but because who
wants to spend time cleaning? 40 minutes IP cooking + 10 minutes natural release, about 3
minutes quick release and it is done!
Once I removed the meat from the pot, I let it cool in a sturdy mixing
bowl for about 5 minutes while I pulled out my hand mixer, added the beaters
and proceeded to shred the pork. This is by far my favorite method of shredding pork, beef,
or chicken—it only takes about 2 minutes to shred it to perfection.
I quickly added about ½ cup shredded pork to
some crisp greens, crushed onion rings and bleu cheese dressing to make a very
tasty salad. (Sorry—I ate the salad
before I remembered to take a picture ☹.)
Next, I will label some zippy freezer bags,
add pork, and put it in a freezer for another day.
The liquid used in this recipe smells soooo
good, I decided to reduce it some so I will be able to savor these flavors
later. The store-bought BBQ sauce I used
is G. Hughes SUGAR FREE Original (I have purchased it in 3-states over the last
5+ years. G. Hughes has several
varieties of sugar free sauces available).
The pork can be used for so many recipes—appetizers, casseroles, tacos/enchiladas/burritos, etc. Use it instead of chicken or
beef in recipes. The flavor is good
without any sauce, but you may want to add more.
