It isn’t actually an egg at all. It is just a simple mixture of ground* flax (or chia) seeds and water, which gel into an egg-like consistency.
Flax eggs are a popular substitute in vegan baking, and are a great alternative for anyone with allergies, too. Besides being easy to make and all-natural, the flax adds a bunch of healthy nutrients and omega-3 fatty acids, giving me an excuse to call whatever I’m making healthy.
*I purchased a small electric Braun coffee/spice grinder on eBay for about $10.00 several years ago. It is perfect for grinding flax seed and spices. 1 flax egg (equivalent to 1 regular egg)=1 Tbsp ground flax + 3 Tbsp water
1 chia egg (equivalent to 1 regular egg)=1/2 Tbsp ground chia + 3 Tbsp water
