Best Low Carb Coleslaw

Great with beef, pork or chicken
6-8 servings

Ingredients:
1 (16-ounce) package coleslaw mix
1/4 cup think sliced onion
1/3 cup Splenda sugar substitute
1/2 tsp. salt
1/8 tsp. fresh ground black pepper
1/2 tsp celery seed
1/2 cup mayonnaise
1/2 cup half & half
1 1/2 Tbsp. white vinegar
2 1/2 Tbsp lemon juice
optional:  thin sliced apple, sunflower seeds, pumpkin seeds, dried cranberries

Directions:
  1. In a large bowl, combine the coleslaw and onion, set aside
  2. In a separate bowl, combine the Splenda, salt, pepper, celery seed, mayonnaise, half & half, vinegar and lemon juice using a whisk
  3. One hour prior to serving, pour mixed dressing over the coleslaw mix
  4. Stir gently to mix
  5. Refrigerate 1 hour to blend
  6. Add any of the optional ingredients just before serving
