Egg & Bacon Muffin Cups


Will make 12 muffin cups 
I found the picture on Pinterest but the link was broken so, no recipe.  Based on the picture, I created a recipe :)
spray muffin pan w/Pam (or similar)
cut strips of bacon in 1/2
"wrap" sides of each muffin pan w/2 pieces of bacon (one for each side)

Mix together:
5-6 whole eggs
3 oz. cream cheese, cubed
1 cup shredded cheese (any kind)
1/2 cup crushed french fried onion pieces
1/4 tsp. black pepper

Pour egg mixture into bacon "cups".  Bake @ 350 for 25-30 minutes.  (The bacon, while cooked thoroughly, will not LOOK cooked.  Reheat in the microwave for about 60-seconds each to crisp the bacon.)
optional: 
diced red/green pepper, sliced mushrooms, chopped black olive, chopped artichoke hearts (not marinated)
