Instant Pot Chicken Barley Pilaf
Instant Pot Chicken Barley Pilaf
Similar to Rice-A-Roni, but with barley*
Serves 10

Ingredients
1 cup water
Tbsp Chicken Better Than Bullion (I prefer low-sodium)

Tbsp butter
1/2 large yellow onion, finely chopped
3-5 cloves minced garlic

1 1/2 cups pearl barley, rinsed (not soaked)
2 3/4 cups water
 ½ to 1 tsp. fresh ground black pepper

In 2 cup microwave-safe measuring cup, add 1 cup water; microwave approximately 2 minutes, to boil add 2 Tspb. bullion, set aside.  Set Instant Pot to Sauté.  Add butter & chopped onion.  Sauté 3-5 minutes.  Add minced garlic.  Stir additional 2-3 minutes, being careful to not burn garlic.  Add rinsed barley, stir to brown barley a bit (3-5 minutes).  Add water & bullion mixture + 2 3/4 cups water; add fresh ground black pepper.  Stir all together, just to mix.  Cancel sauté setting.

Add Instant Pot Lid, set to pressure cook, 20 minutes.  Set valve to sealing. When cook time is up, quick release.  Extra liquid will be absorbed within 5-10 minutes.


*The USDA states that every 100 grams of pearl barley contains 0.4 grams of fat, 2.3 grams of protein and 28.2 grams of carbohydrates. Out of these carbohydrates, 3.8 grams come from dietary fiber. Pearl barley's nutrition also includes:
· 7 percent of the daily value (DV) for iron
· 5 percent of the DV for magnesium
· 7 percent of the DV for zinc
· 12 percent of the DV for copper
· 11 percent of the DV for manganese
· 16 percent of the DV for selenium
· 7 percent of the DV for vitamin B1 (thiamin)
· 5 percent of the DV for vitamin B2 (riboflavin)
· 13 percent of the DV for vitamin B3 (niacin)
· 7 percent of the DV for vitamin B6
