Cheesy Broccoli-Pork-Black Bean Stir Fry


Serves 2 as main dish/complete meal

2 Tbsp butter
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. black pepper
2 cups broccoli florets (fresh or frozen)
1 cup cooked black beans (rinsed & drained; omit or adjust beans to make low/lower carb)
1 cup cooked beef, pork, chicken (sliced, cubed, shredded, crumbled). 
1 cup shredded cheddar cheese
¼ cup shredded fresh parmesan
¼ cup French fried onion rings

In a large frying pan, melt butter over medium heat.  Add garlic powder, onion powder and ½ tsp. black pepper.  Add broccoli & black beans.  Cook, stirring occasionally (4 minutes if fresh broccoli, 5-7 minutes if frozen broccoli).  Add cooked pork (or other meat).  Stir all ingredients together.  Sprinkle cheeses over all.  Add lid to pan.  Cook for additional 5-7 minutes.  Remove lid, sprinkle French fried onion rings over all.  Serve.
