Crustless Ham & Cheese Quiche


Low carb, gluten free, high protein--great for breakfast, lunch or dinner

2 Tbsp. butter

½ cup finely chopped onion

½ tsp finely minced garlic

2-3 cups cubed (lean) ham

Melt butter in medium frying pan over medium heat.  Add chopped onion, stirring occasionally until translucent.  Add minced garlic to onion/butter mixture, heat and stir 2-3 minutes. Add ham to onion/garlic mixture. Stir over heat to combine for 3-5 minutes.  Pour ham mixture into bottom of prepared deep-dish pie plate.  Set aside.

 (Can adjust cheese varieties according to preference—Swiss, Jack, Asiago, etc.)

1+ cup shredded Cheddar

1+ cup shredded Colby Jack

1+ cup shredded fresh Parmesan

Add cheeses to top of ham mixture.

 5 eggs

1 cup sour cream OR ½ cup heavy whipping cream

½ tsp. black pepper

 Grease a 9” deep=dish pie plate or spray with non-stick spray.  Break 5 eggs into a medium mixing bowl. Beat eggs with a fork or wire whisk until thick and lemon colored.  Add sour cream OR heavy whipping cream.  Add black pepper. Stir well to combine.  Pour egg mixture over ham & cheese.  Bake at 350F for approximately 30 minutes—until cheese is golden brown and knife comes out clean when center of quiche is tested.  Cool 5 minutes before serving.
