This recipe is low-carb, grain & gluten free. If you miss the crust, add your favorite crust to the baking dish before adding the meat mixture.
This is great for breakfast, lunch or dinner! Serve with avocado/guacamole, sour cream, sliced or diced tomato, green salad with your choice of dressing--be creative, but most of all ENJOY! Great left over, too.
Prepare 9" pie plate or 9"x9" oven-safe dish with butter or non-stick spray
Ingredients:
2 cloves finely minced garlic
1/4 cup finely chopped yellow onion
2 Tbsp. butter
Chop 4-8 slices uncooked bacon in approximately 1/2" pieces
1/2 to 1 cup chopped cooked ham
Melt butter in 10" frying pan over medium-high heat. Add garlic & onion; sauté; add bacon and/or ham to sauté mixture. Cook until bacon is cooked through (5-10 minutes). Remove sautéed mixture to plate to cool.
4 large eggs
1/2 cup heavy whipping cream (HWC)
1/2 tsp black pepper
Preheat oven to 350F.
3 cups shredded cheese (use any type of cheese you like--I prefer cheddar, mozzarella, fresh parmesan, Monterey Jack, etc.). Divide, setting aside 1/2 cup for garnish.
In a 1-quart bowl, crack eggs, beat eggs well (1-2 minutes). Add HWC & black pepper. Stir all together. Set aside.
Add sautéed meat mixture to prepared baking dish; distribute evenly on prepared plate. Distribute cheese evenly over meat mixture. Stir egg mixture well and pour over meat/cheese layers. Sprinkle remaining cheese over all.
Bake for 30-45 minutes; until table knife inserted into the center comes out clean and top is golden brown. Cool for 10 minutes; serve.
Optional: garnish with crushed French fried onions or chopped green onion.
