Cinnamon Roll Cake

Attention Cinnamon Roll Fans:  If you want VERY similar results, ready to eat in about an hour, this will not disappoint!

Start softening the butter and cream cheese at least 2 hours before mixing ingredients; don't rush it for best results!

Ingredients*:
  • 3 cups flour
  • 1/2 tsp salt
  • 1 cup sugar
  • 4 tsp baking powder
  • 1 1/2 cup milk
  • 2 eggs
  • 2 tsp. vanilla
  • 1/2 cup MELTED butter
Cinnamon mixture:
  • 3/4 cup SOFTENED butter
  • 1 cup brown sugar
  • 2 Tbsp flour
  • 1 Tbsp cinnamon
Icing:
  • 8 oz. SOFTENED cream cheese
  • 1 tsp vanilla
  • 1 cup sifted powdered sugar (reduces lumps)
  • 5 Tbsp heavy whipping cream (add gradually to desired thickness)
Instructions:
1.  Mix flour, salt sugar, baking powder, milk, eggs and vanilla together.
2.  Stir in melted butter, slowly.  Pour into greased 9x13 pan.
3.  Mix topping ingredients (3/4 cup butter SOFTENED, brown sugar, flour and cinnamon).  Drop over cake mixture evenly.
4.  Swirl your topping and cake mixture with a knife going up and down the length of the cake only inserting it in the cake mix a little (do not touch or scrape the bottom of the pan).
5.  Bake at 350 for 28-32 minutes.
6.  While cake is baking, cream the cream cheese to smooth.  Add the vanilla, stir until smooth.  Add the powdery powdered sugar to the smooth, creamed mixture.  Gradually add the heavy whipping cream to the cream cheese mixture until desired thickness.  This should be ready when the cake comes out of the oven.  Spread/drizzle over cake.  Enjoy!

* raisins, currants, chopped nuts optional, but delicious
