Grandma's Green Bean Casserole

A healthier option--It is not worth compromising on flavor (IMO) but this recipe is NOT a compromise--consider it a healthier version of an old favorite. A great alternative to the long time traditional green bean casserole, but WITHOUT the canned soup or French fried onions--it still tastes GREAT! (If I had not made it myself I would have not noticed the difference.)

Makes 10 servings

2 Tbsp. butter
2 Tbsp. all-purpose flour
1/2 tsp salt
1 tsp. white/granulated sugar (or quality sugar substitute)
1/4 cup diced onion
1 cup sour cream
3 (14.5 oz.) cans French style green beans, drained and rinsed
2 cups shredded Cheddar cheese
1/2 cup crushed/crumbled buttery crackers (like Ritz or Club)
2 Tbsp. melted, melted

Directions:
  1. Preheat oven to 350 degrees F.
  2. Melt 2 Tbsp butter in a large skillet over medium heat.  Stir in flour until smooth, and cook one minute.  Stir in the salt, sugar, onion, and sour cream.  Add green beans, and stir to coat.
  3. Spread the mixture into a 2 1/2 quart casserole dish.  Sprinkle shredded cheese over the top.  In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.
  4. Bake for 30 minutes in the preheated oven, or until the top is golden brown and cheese is bubbly.
